What the Puck?

Pressure’s on!

The Wolfgang Puck Pressure Oven is not the latest gimmick, rather in my kitchen it's become an indispensable cooking vessel for one pot comfort food cooked super-fast. So how does it work? It is essentially the cousin of the pressure cooker which, unlike the pressure oven, relies on braising liquids to cook food. The pressure oven uses the same pressure mechanism to roast, bake, broil or toast anything you would prepare in a regular oven in a quarter to half of the time. Conventional ovens cook with dry heat whereas the pressure-sealed chamber of the Puck Oven locks in moisture. As a counter top oven it also has a relatively small footprint.

You simply place the food tray on the rack, close the door and press down a lever to seal the door shut and adjust the valve to a sealed position – and you’re good to go! Once your food is cooked, you adjust the valve to release the pressure. In addition to roasting a 14 lb turkey in under an hour, here are some speedy dishes that have come out of my Puck Oven:

30-Minute Puck Oven Roasted Chicken and Cauliflower with Cherry Tomatoes

What You Need

  • 4 bone in and skin on chicken thighs

  • 1 head of cauliflower separated into 2 inch florets

  • 1 cup red cherry tomatoes

  • 2 Tbsp olive oil

  • Salt and pepper to taste

How it’s Done

  1. Set the Puck Oven to the Roast setting and set the temperature to 475 degrees.

  2. Place the metal rack in the center position of the oven.

  3. Meanwhile toss the cauliflower florets with the olive oil in the Puck Oven-provided roasting pan and season with salt and pepper.

  4. Season the chicken thighs with salt and pepper and place them skin side up on the bed cauliflower.

  5. When the oven temperature has reached 475 degrees, place the roasting pan with the chicken and cauliflower in the oven and adjust the valve to the sealed position and roast for 20 minutes.

  6. After 20 minutes release the pressure and remove the roasting pan from the oven.

  7. Add the cherry tomatoes and return pan to oven and readjust the valve to the seal position.

  8. Roast for 10 minutes and remove pan from the oven. Use an instant-read thermometer to check the temperature of the thighs that should be at 165 degrees.

The result is perfectly crispy chicken skin with lightly caramelized and tender cauliflower topped with juicy tomatoes. It goes from the oven to table in just thirty minutes.

Puck Oven Roasted Brussel Sprouts in 20 Minutes

What You Need

  • 1 1/2 lbs whole sprouts

2 Tbsp olive oil

  • Salt and pepper to taste

How it’s Done

  1. Set the Puck Oven to the Roast setting and set the temperature to 475 degrees.

  2. Place the metal rack in the center position of the oven.

  3. Meanwhile toss the brussel sprouts in olive oil in the Puck Oven-provided roasting pan and season with salt and pepper.

  4. When the oven temperature has reached 475 degrees, place the roasting pan with the brussel sprouts in the oven ans seal shut to the pressure setting.

  5. After 20 minutes release the pressure and remove roasting pan form oven.

Perfect results...
